There is not much to say about Chablis that hasn’t been said before, it is cooler climate wine region producing more acidity driven, minaral and flinty than fruity wines.
Domaine Daniel-Etienne Defaix, Bourgogne Chablis Vieilles Vignes, is a perfect example of what this wine region gives.
At perfect price point this wine is telling stories of how wine was made giving you complexity and history of Chablis region in one bottle. Minerality with flinitnes, high acidity and freshness dominate this wine along with rustic notes perfectly interwoven and clearly displays what is real winemaking – an art.
Vieilles Vignes are old vines, giving concentrated extract and material itself was fermented with indigenous yeasts which gives authenticity to terroir. 2013 is current vintage and is already ready to drink, but can be also put to age for at least 10-15 years.
Wine paired extremely well with grilled salmon, sweet potatoes and leek sauce.. And after meal was finished, wine continued to evolve in glass making it meal and salty dessert on its own..
